Recipe: Soy and ginger cod
Two things to be said about this recipe: it's quick and easy, and it's healthy and very delicious. Yes, that was four things. If you like fish and you like Asian flavours, you must give this one a try. I can't take credit for it, it's my husband's, but I can say that I really enjoyed my plate of food! In fact, I'm considering creating a section on healthy fish recipes.

Ingredients
Cod fillets - 2
Lemon - 1
Ginger - 1.5 inch
Soy sauce - 4 tbsp
Chilli flakes - a pinch
Pak choi - 2 small bunches
Garlic - 6 cloves
Olive oil
Salt
Pepper
Instructions
Peel and grate the ginger
Peel and chop the garlic
Clean and separate out the pak choi leaves
Chop the lemon in half
line a baking tray with tin foil
Pre-heat oven to 200 degrees celcius
clean and pat dry the fish fillets
season the fillets well with salt and pepper. Rub into both sides of the fish gently
place the fillets (skin-side down) on the tray, and place one lemon half, head down between the two fillets
Bake in the pre-heated oven for 12 minutes or so, until the fish is flaky and opaque
In the meantime, heat 2 teaspoons of olive oil in a pan on medium
When hot, add the chopped garlic and saute for 2- 3 minutes until beginning to turn golden brown
Add the pak choi leaves, season with salt and chilli flakes, mix the garlic through, and saute till the leaves are slightly wilted and soft
Turn off the heat and place aside
For the sauce, mix the soy sauce with ginger, a squeeze of lemon, and a pinch of chilli
When the fish is ready, serve onto a plate, drizzle the soy sauce on top, and spoon on the pak choi
