Recipe: Indian sausage masala on sourdough toast
Desi sausages on buttered griddle-toasted sourdough bread, with wilted spinach below and a runny fried egg on top! What’s not to love right? This Indian sausage masala recipe is a great brunch idea, and makes an equally yummy all-day-breakfast.
Serves 2
What you need:
4 pork sausages - I used old English with just some black pepper and mace. Avoid anything sweet or with herbs - would clash with the flavours we’re going for
2 large tomatoes, sliced
1 large red onion, sliced fine
3 large garlic cloves, sliced fine
10-12 curry leaves
2 green chillies, sliced fine
4 large eggs
4 handfuls of baby spinach
small handful fresh coriander
butter
vegetable oil
salt and pepper
What you do
Preheat your oven to 200C (fan)
Place the sausages on parchment paper, in a baking tray. When the oven is hot, pop the sausages in for 30 mins
Now to make your masala!
Heat 1 tbsp of vegetable oil in a frying pan
Sizzle the sliced garlic until it starts to turn golden brown
Then add the curry leaves and green chillies. Saute for 30 seconds
Then the sliced onions with a pinch of salt, mix through, reduce the heat to medium low, and allow the onions to start to soften and change colour, stirring occasionally
Once the onions are softening, add the tomatoes, mix through and allow to cook for 15-20 mins, stirring every now and then, until they’re starting to break down
Season with salt and pepper
When the sausages are ready, remove from the oven, slice and add to the masala, and stir it all well. Cook on low for another 10 mins or so, mixing occasionally. If it all looks too dry and is sticking to the pan, go ahead and add a little more oil
While the sausages are cooking with the masala, toast your sourdough bread. Knob of butter onto a heated pan (I like a griddle pan best because you then get all those lovely toasted buttery ridges in the bread yum!), bread on top, toast for a few minutes. Butter the top of the bread and when the bottom is browed flip over the do the other side
While the bread is toasting, wilt your spinach. Place spinach leaves in a sieve/colander and pour boiling water on them until they wilt. Allow to drain
Next fry/poach/scramble your eggs - however you like it best
Then plate up! Toasted sourdough first, then fork the spinach on top, then sausage masala spooned on, then your eggs. Finally, a sprinkle of salt, pepper and finely chopped coriander
