Recipe: Masala Idlis

Masala idli recipe

This is a shortcut masala idli recipe - so nothing fancy schmancy about this one, and not everything is made from scratch! Light fluffy idlis, tossed in South Indian spices. Tasty and very easy to put together. These are a great brunch idea - they're high in protein and also have the carbs you need to take you through the day.

Cook Time - 25 min

Total Time - 40 min

Ingredients

  1. Ready-to-steam idli batter/ MTR rice idli mix - enough to make 16 idlis

  2. MTR chilli chutney powder/milagai podi powder - 2 tbsp

  3. Mustard seeds - 2 heaped tsp

  4. Red chillies - 2

  5. Curry patta - 1 sprig (10-12 leaves)

  6. Urad dal - 2 tsp

  7. Salt

  8. Vegetable oil - 1 tbsp

Instructions

  1. Prepare the idlis in an idli steamer. If you're using ready-to-steam batter, steam on high for approximately 12 - 15 minutes. If using an idli mix, follow the instructions on the pack

  2. When the idlis are ready, take them out of their moulds and allow to cool slightly

  3. Cut each idli into four pieces. If you're using mini idlis like we did, you don't need to cut them

  4. In the meantime, heat the oil on medium in the pan

  5. When the oil is hot, add the mustard seeds, the urad dal, and the red chillies and sauté gently till they start to crackle. This should only take a few seconds

  6. Then add the curry leaves and sauté for 15 seconds or so

  7. Add your idlis and mix the spices through

  8. Sprinkle the chilli chutney powder and salt on top and mix through. Make sure you've coated the idlis evenly. Continue to turn and fold over for 2 to 3 minutes on high heat

  9. Serve up

Notes

  1. Masala idlis taste delicious with lots of coconut chutney and sambhar! I like them with just some yogurt on the side too
