Recipe: BBQ paneer tikka

I'm really excited about this recipe. Many reasons. I love paneer, I love marinating, I love BBQing, I love that lovely subtle smoky charred flavour, I love sharing food with friends and family. And this recipe is perfect for all this! And it's dead easy (once you've gathered all your ingredients). 

  • Serves: 4-5

  • Prep time: 30 mins + 1 hr min resting time in marinade

  • Cook time: 15 - 20 mins

What you need

  • 1 kg paneer cut into chunky cubes

  • 1.5 cups yogurt

  • 8 garlic cloves

  • 3 cm ginger

  • 1 tsp turmeric

  • 1 green chilli

  • 1 tsp red chilli powder

  • 1 tbsp black peppercorns

  • 3 tsp cumin seeds, gently dry roasted

  • 3 tbsp of kasoori methi (dried fenugreek leaves)

  • 1 heaped tsp garam masala

  • Salt to taste

  • Vegetable oil for basting

What you do

  1. Grind the garlic, ginger, green chilli, peppercorns and roasted cumin seeds to a paste

  2. Spoon your yogurt into a large bowl

  3. Add the turmeric, red chilli powder, garam masala and your spice paste and mix well

  4. Sprinkle on the kasoori methi and mix through

  5. Add salt to your liking and mix

  6. Add your paneer cubes and dive in with your hands to coat them all evenly with the marinade (Trick: cover the bowl with a large plate and shake thoroughly to coat if your bowl doesn't have enough space for your hands!)

  7. Cover and allow to marinate for as long as you can. Minimum 1 hr

  8. When your BBQ is ready, all you need to do is skewer the paneer, drizzle with vegetable oil, and place on the grill. As with anything that you're BBQing, don't forget to baste with marinade from the bowl and oil as you go along!

Serving suggestion: With a lovely cooling yogurt-fried garlic-roasted cumin dip or a cucumber raita, a side salad (cukes, lettuce, tomatoes for example) and some warm naans! You can break up the paneer cubes with some colourful peppers before the skewers go on the grill too, for colour and more flavour.
