Recipe: Crispy fried okra (kurkuri bhindi)
Crispy fried okra is one of my favourite Indian side dishes. Crunchy and packed with flavour!
Serves 4
Prep Time - 15 min
Cook Time - 20 min
Total Time - 35 min
Ingredients
Okra - 400 g
Gram flour - 8 tbsp
Red chilli powder - 1 tsp
Asafoetida - 1/2 tsp
Vegetable oil - to fry in
Salt
Instructions
Wash the okra and chop the heads and tips off
Slice in half
Place in a large bowl and add the gram flour, chilli powder, asafoetida, and salt
Use your hands to mix it all together. Ensure all the okra is coated
Heat oil in a deep frying pan
When the oil is hot, drop the okra in, in batches, and fry till golden and crisp
Drain on kitchen towels
Serve hot, with rice and a dhal. I served this with a curry and chapattis, and it was very tasty too.
Notes
You could sprinkle some chaat masala on the fried okra, once you've drained it, for a slightly tangy kick.
