Recipe: Crispy fried okra (kurkuri bhindi)

Fried okra recipe

Crispy fried okra is one of my favourite Indian side dishes. Crunchy and packed with flavour!

Serves 4

Prep Time - 15 min

Cook Time - 20 min

Total Time - 35 min

Ingredients

  1. Okra - 400 g

  2. Gram flour - 8 tbsp

  3. Red chilli powder - 1 tsp

  4. Asafoetida - 1/2 tsp

  5. Vegetable oil - to fry in

  6. Salt

Instructions

  1. Wash the okra and chop the heads and tips off

  2. Slice in half

  3. Place in a large bowl and add the gram flour, chilli powder, asafoetida, and salt

  4. Use your hands to mix it all together. Ensure all the okra is coated

  5. Heat oil in a deep frying pan

  6. When the oil is hot, drop the okra in, in batches, and fry till golden and crisp

  7. Drain on kitchen towels

  8. Serve hot, with rice and a dhal. I served this with a curry and chapattis, and it was very tasty too.

Notes

  1. You could sprinkle some chaat masala on the fried okra, once you've drained it, for a slightly tangy kick.
