Hands up if you love bread omelette like I do. Spicy moreish - it’s the best kind of brunch! Here’s my take on it.
What you need
2 eggs, beaten
2 bread slices
1 green chilli, finely chopped
1/2 red onion, sliced fine
2 cloves of garlic, chopped fine
coriander, chopped fine
2 tbsp grated cheese (or more!)
salt and pepper
butter
What you do
Mix the beaten eggs, chillies, cheese, coriander, salt and pepper in a mixing bowl
Heat a frying pan with a generous amount of butter (the more the butter, the yummier this is! I know - not the healthiest - but if you’ve not been advised to lay off the fat for health reasons, a little indulgence every now and then doesn’t hurt! That’s the way I look at it)
When hot, add the sliced onion and sauté until the onion starts to brown. Ah that smell!
Now add the garlic and sauté for about 30 seconds
Pour on the egg mix
Immediately place the two slices of bread beside each other on the egg
Butter the tops of the bread
Allow to cook until the egg is almost done. Flip the entire thing over (be careful, this is where it could all fall apart!) and let the buttered side of that bread get lovely and crisp - yum yum
Now flip over and cook for a while longer until the egg and bread and entirely cooked - you don’t want a squishy bread egg situation
