Pudina chutney, mint chutney, coriander chutney - different names for the same delightful classic Indian chutney. Great in sandwiches (think Bombay sandwich), perfect as a dip for samosas and pakoras, an absolute must with chaat. It's refreshing, it's that wonderful mix of sweet and tangy and spicy all at once. Ingredients
Coriander - 1 large bunch
Mint - 1 large bunch
Green chillies - 2
Garlic - 4 cloves
Ginger - 1 inch
Sugar - 2 tsp
Salt
Instructions
Wash and roughly chop the coriander
Wash and roughly chop the mint
Wash and cut the chillies in half
Wash and peel the garlic
Wash, peel and roughly chop the ginger
Blend the coriander and mint leaves, the chillies, ginger and garlic to a smooth paste
Add the sugar and salt and blend again
Pour into a small bowl
