This pesto chicken recipe is quick and very easy to follow. Chicken fillets filled with pesto and cheese, rolled and baked. Yum.

Ingredients
Chicken breasts - 4
Pesto - 4 heaped tbsp
Parmesan cheese - 2 tbsp of grated cheese
Cheddar cheese - 4 tbsp of grated cheese
Pepper
Salt
Olive oil
Cocktail sticks
Cling film/freezer bags
Rolling pin
Instructions
Pre-heat the oven at 200 degrees
Place a chicken breast fillet on a piece of cling film and fold film over to cover the fillet. Alternatively, place in a clear plastic bag, like a freezer bag, and seal
Use a rolling pin to tenderise the meat, by hitting it evenly for a minute or so, till it is thin and soft
Remove from the cling film or plastic bag and keep aside
Do the same for the other fillets
Grease a baking tray/roasting tin with olive oil
Place a chicken fillet on the tray, heap a tbsp of pesto onto it, spread evenly on the fillet
Sprinkle some parmesan and cheddar cheese on top
Sprinkle some salt and pepper
Very carefully, roll the fillet over the filling, and secure with a cocktail stick
Do the same for the other fillets
Brush the fillets with a little olive oil
Place in the centre of your pre-heated oven, and bake for around 25-30 minutes, till the chicken is cooked through and turning brown
The chicken will release juices when cooked, so use a spatula to carefully remove the cooked chicken and serve onto your plate

You can serve these delicious chicken rolls with a green salad or roast vegetables.
