A bhurji is the Indian version of a scramble. You could have an egg bhurji, which is eggs scrambled with spices, or a paneer bhurji, for instance. The great thing about a bhurji is that it's really easy to cook up, and it can be eaten with chapattis or on toast or in a sandwich, or even used as a paratha filling. I tweaked the traditional egg bhurji recipe for this healthy and quick brunch idea that's high in protein!

Ingredients
Bread - 2 slices (I use multi-seed bread)
Eggs - 2
Onion - 1 small
Mustard seeds - 1 tsp
Curry leaves - 1 sprig (8-10 leaves)
Chilli powder - 1/2 tsp
Chorizo slices - 3 (if you're using a chorizo ring, fine chop a couple of inches)
Salt
Pepper
Olive oil
Instructions
Peel and finely chop the onion
Heat 1 tsp of olive oil in a pan on medium
When hot, add the mustard seeds
When they start to crackle, add the onions and sauté till translucent
Add the curry leaves and sauté for another minute
Tear and add the chorizo slices or chuck in the chopped chorizo, stir through and allow to cook for 5 minutes, stirring often
Crack the eggs in a small bowl and whisk with a fork
Add the eggs to the spice mix
Sprinkle chilli powder, salt, and pepper
Stir continuously until the eggs are cooked through. Use the cut and fold method to scramble your eggs
Toast your bread slices
When ready, serve up, with the egg and chorizo bhurji on top
Notes
You could add a couple of cloves of finely chopped garlic to the onions and cook for a minute
You could also add half a chopped tomato before you add the egg and cook through
