I'm very partial to seafood, and love a grilled fish. A few nights ago I had a salmon craving and decided to stir up a quick garlic and capers infused lemon-butter sauce to accompany the fish. Here's my grilled salmon recipe. Enjoy.

Ingredients
Salmon fillets - 2
Baby spinach - 150/200 gm
Butter - 4 tbsp
Lemon - 1 large
Capers - 2 tbsp
Garlic - 4 large cloves
Pepper
Salt
Olive oil
Instructions
Preheat the grill on high for 5 minutes
Line a baking tray with tin foil
Place the fish fillets in the centre of the tray
Sprinkle with salt and pepper
Grill for 15 minutes approximately, until the fish is opaque and flaky
In the meantime, place a wide bottomed saucepan on the hob on medium. Heat a tsp of olive oil in the pan
Add the spinach leaves to the pan, sprinkle very lightly with salt and pepper, mix through, cover and allow the spinach to wilt. Then cook open until the water evaporates
While the spinach is cooking, place another saucepan on the hob and add the butter and allow to melt on low
Peel and finely chop the garlic
Juice the lemon
Turn the heat up to medium
When the butter starts to sizzle, turn down to low again, add the garlic and the capers and stir continuously till the garlic turns golden brown
Add the lemon juice and stir for a couple more minutes
Sprinkle a little salt and pepper and stir for another minute
Take off the heat
Serve the spinach onto two plates and flatten gently
Place the fish fillets on the spinach
Pour over the lemon butter sauce
